unfortunately recording coversations is illegal, telephone or VoIP, you need a warrant as the authorites do. To do so has to be with the conscent of the other party. eg, Have you ever received a phone call from a goal payphone, it warns you and give you the option to accept or decline the call, in Australia it does not sure about the US? I used to maintain these systems and they recorded conversation, but were erased after analysis, if clean , saved as evidence if not? A simple reel to reel will do the job, but again the legalities, you can be sued??
